• Olive oil: 2–3 tablespoons

• Balsamic vinegar: 1/4–1/2 cup

• Garlic: 3–4 cloves, minced

• Salt: 1–1½ teaspoons, to taste

• Black pepper: 1/2–1 teaspoon, freshly ground

• Italian seasoning: 1–2 teaspoons (or dried oregano/basil)

• Honey: 1 tablespoon (optional, for balsamic glaze)


Instructions

• Pat chicken breasts dry and pound to 1/2-inch thickness for even cooking.

• Season both sides generously with salt, pepper, and Italian seasoning.

• Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering.

• Sear chicken 5–6 minutes per side until golden brown and cooked through (165°F internal temp); remove to a plate.

• In the same skillet, add balsamic vinegar, garlic, and honey (if using); scrape up browned bits and simmer 2–3 minutes until slightly thickened.

• Add halved cherry tomatoes and cook 4–5 minutes until softened and blistered, stirring occasionally.

• Return chicken to skillet, nestling into tomatoes; top each breast with mozzarella slices.

• Cover and cook 2–3 minutes until cheese melts; add chopped basil and spoon sauce over chicken.

• Remove from heat; garnish with fresh basil leaves and drizzle with extra balsamic glaze if desired.

• Serve hot with crusty bread, pasta, or over greens for a complete meal.
